To make porridge: Soak these oats for 1 hour before use. Add a cupful of oats to a pint of water in a saucepan and bring to a steady simmer for 10 minutes. Add milk and bring back to a simmer before serving with fruit or honey to taste.
To use in biscuit and flapjack mixes: Soak the oats for 1-2 hours. Mix butter and molasses in a pan and heat gently. Add the oats, together with raisins and other fruits and cook for 10 minutes. Spoon the mixture onto a baking tray and bake for 15-20 minutes.
To use in veggie burgers: Soak the pinhead oats for 1-2 hours. Cook potatoes, carrots, leeks and other vegetables to taste. Mash the potato finely and chop the other vegetables. Fry garlic and onions and stir in the mix. Add a cupful of pinhead oats to a saucepan, cover with water and bring to a gentle simmer for 10 minutes. Combine all of the ingredients and form into patties. Bake in the oven for 15 minutes, or fry in a pan.
